Ingredients:
3/4 c baked, mashed and cooled sweet potato
1/2 c creamy almond butter
1/4 c cocoa powder
1/2 c chocolate protein powder (if not using, just add 1/4 c more cocoa powder)
1/2 c coconut or granulated sugar
1 t baking powder
1 t vanilla
1/4 t salt
1 egg
1/2 c chocolate chips, optional
flake salt, optional
Instructions:
Preheat oven to 350 degrees. Butter or line a 9-inch square pan with parchment paper.
Mix all ingredients except the flake salt well until you have a smooth batter.
Pour evenly into pan and top with flakey salt, if using.
Bake 30-40 minutes or until a toothpick comes clean from the inside.
Cool before slicing.
