Sweet Potato Protein Brownies



Ingredients:

  • 3/4 c baked, mashed and cooled sweet potato

  • 1/2 c creamy almond butter

  • 1/4 c cocoa powder

  • 1/2 c chocolate protein powder (if not using, just add 1/4 c more cocoa powder)

  • 1/2 c coconut or granulated sugar

  • 1 t baking powder

  • 1 t vanilla

  • 1/4 t salt

  • 1 egg

  • 1/2 c chocolate chips, optional

  • flake salt, optional

Instructions:

  1. Preheat oven to 350 degrees. Butter or line a 9-inch square pan with parchment paper.

  2. Mix all ingredients except the flake salt well until you have a smooth batter.

  3. Pour evenly into pan and top with flakey salt, if using.

  4. Bake 30-40 minutes or until a toothpick comes clean from the inside.

  5. Cool before slicing.
