Cookie Ingredients:
1 c quick oats (ground into an oat flour)
1/4 c unsweetened shredded coconut
1 T ground flaxseed (flax meal)
1/2 t baking powder
1 t cinnamon
1/4 t salt
1 egg
1/2 c roasted, mashed and cooled sweet potato
1 T olive oil
1 T maple syrup
1 t vanilla
Icing ingredients:
1/2 c greek yogurt
1/4 t vanilla
1 T maple syrup
2 T cane sugar
Instructions:
Preheat oven to 375 degrees
Mix together oats, coconut, flaxmeal baking powder, cinnamon and salt
Add in and mix together with the rest of the cookie ingredients
Make cookies using 2 T of dough, first rolling into a ball, then shaping and flatten to about 1/3" thick
Bake 15-18 minutes until the edges are starting to brown.
Mix all icing ingredients together and frost cookies when they've cooled down.
