Healthy Sweet Potato Quick Bread With Oat and Seed Topping




Bread Ingredients:

  • 1 c all purpose flour

  • 3/4 c oat flour (rolled oats blended in blender)

  • 1/2 t baking powder

  • 1 t dried ginger

  • 3/4 t salt

  • 1/2 t nutmeg

  • 1 c baked, cooled and mashed sweet potato

  • 2 large eggs

  • 1/2 c cane or coconut sugar

  • 2/3 c buttermilk (can making adding 2 t vinegar to 2/3 c of any milk and let sit for 5 minutes)

  • 1/2 c plain greek yogurt

  • 1/2 T dried rosemary (optional)

  • 1/2 c dried cranberries or goji berries

Topping Ingredients:

  • 1 T each: raw pumpkin seeds, raw sunflower seeds, rolled oats (quick is fine), sugar

  • 1/4 t salt (flakey salt is best but regular salt is fine too!

Instructions:

  1. Preheat oven to 350 degrees F or 177 degrees C

  2. Coat a loaf pan in butter or cooking spray. You may also want to line the long way with parchment paper for easy removal.

  3. Mix together the dry ingredients (flours, baking powder, ginger, salt and nutmeg)

  4. Add in the remaining ingredients and mix until the batter is smooth. Pour into pan.

  5. Mix topping ingredients and evenly sprinkle over the top of the raw batter.

  6. Bake 50-60 Minutes or until a toothpick comes clean from center.

  7. Allow to cool 5-10 minutes before removing from loaf pan.
