Brown Butter White Chocolate Chip Purple Sweet Potato Cookies

  • 1 1/4 c all purpose flour

  • 1/2 t baking soda 

  • 1/4 t salt

  • 1/2 c butter (1 stick)

  • 1/4 c granulated sugar

  • 1/4 c brown sugar

  • 1 egg

  • 1/2 c baked and cooled purple sweet potato

  • 1 t vanilla extract

  • 1/2 c white chocolate chips


  1. In a saucepan, melt butter on medium heat, stirring occasionally. When the butter starts to look a little brown on the bottom when stirred, remove from the heat and set aside.

  2. Mix dry ingredients (flour, baking soda, salt)

  3. In a different bowl, mix together the butter, sugars, egg, sweet potato and vanilla.

  4. Combined mixtures, add chocolate chips and mix until incorporated.

  5. Let cool in fridge for 30 minutes

  6. Preheat oven to 350 degrees F or about 177 C

  7. Scoop cookies about 2 T in size and roll into a ball, placing them on parchment lined baking sheet with 2" spacing.

  8. Bake 10-12 minutes or until the edges are lightly browned.
